Peruvian-Inspired Keto Beef Lomo Saltado with Red Onion and Tomato
A keto home adaptation of the Peruvian stir-fry lomo saltado: lean beef, red onion and tomato in a soy and red wine vinegar sauce with aji amarillo, served without rice or fries.
Mamma mia, a Peruvian stir-fry with no rice and no fries, and it still has all its soul! Lomo saltado is a quick beef wok dish with a glossy, tangy sauce, and this is my keto home adaptation: lean beef, red onion and tomato, sharpened with aji amarillo and red wine vinegar.
The traditional version is served with french fries and rice. This keto version leaves both out, so the beef and vegetables carry the whole plate. Buon appetito!

Method
Prep everything
Cut the beef into strips about 1/4 inch thick, across the grain. Cut the onion and tomato into wedges and mince the garlic. Stir the soy sauce and red wine vinegar together in a small bowl. Keep everything within reach, because the cooking is quick.
Sear the beef
Heat half of the olive oil in a wok over high heat until it shimmers. Add the beef in one layer, in batches if needed, and sear for about 1 1/2 minutes per side, until browned on the outside and still a little pink in the centre. Leave the browned beef in the wok while you prepare the vegetables.

Move the beef to a bowl. Add the rest of the olive oil and the onion wedges, and stir-fry for 1 minute until the edges start to char. Add the tomato wedges, the garlic and the aji amarillo paste, and cook for 1 more minute, until the tomato softens but keeps its shape.

Return the beef and its juices to the wok. Pour in the soy sauce and red wine vinegar and toss over high heat for about 1 minute, until the sauce turns glossy and coats the beef and vegetables.
Finish and serve
Take the wok off the heat, scatter the chopped cilantro over the top and season with the salt and black pepper. Toss once and serve at once on a warm plate.
Good to know
- Beef strips must be cooked safely: keep the raw beef chilled until you use it, wash hands, knife and board after touching it, and cook the strips until the thickest one reaches 63 °C (145 °F) in the centre.
- Sear the beef in batches so the wok stays very hot; crowded meat steams and turns grey instead of browning.
- Keep the tomato in large wedges and fold it in just until softened, so it holds its shape instead of turning into a sauce.
- Add the soy sauce and vinegar off the beef juices and toss hard for about a minute; the pan juices reduce into a glossy glaze.
