Greek-Inspired Lemon-Oregano Chicken with Cucumber, Tomato and Feta Salad (Keto)
Boneless chicken thighs marinated in lemon, garlic and oregano, seared until golden and served with a crisp cucumber, cherry tomato and feta salad.
Mamma mia, this one needs no bread and no rice to feel like a proper meal! Juicy chicken thighs, bright with lemon, garlic and oregano, sit beside a cool salad of cucumber, cherry tomato and feta, with the pan juices tying it all together.
Inspiration comes from the classic Greek pairing of lemon-marinated chicken with a cucumber and feta salad. I have adapted it for a low-carb menu: the salad has no onion, no olives and no potatoes.

Method
Marinate the chicken
Cut 300 g boneless skinless chicken thighs into chunks about 4 cm across and pat them dry. Mix them in a bowl with 2 tbsp olive oil, 2 tbsp lemon juice, 2 cloves garlic (finely minced), 1 tsp dried oregano and 1/2 tsp salt. Rest for 10 minutes while the pan heats up. Wash hands, knife and board after handling raw chicken.
Rest and slice
Move the chicken to a board, rest it for 5 minutes, then slice any larger chunks in half. Keep every spoon of the pan juices in the skillet.
Serve
Divide the chicken and the salad between two plates, spooning any leftover juices over the chicken. Serve at once while the chicken is still warm.
Good to know
- Pat the chicken dry before marinating so it browns in the pan instead of steaming.
- Leave the chicken alone for the first 4 minutes of searing; it will release from the pan once a golden crust has formed.
- Cut the cucumber and tomatoes just before serving and toss them with the feta at the last moment so the salad stays crisp.
- Check the thickest chunk with a thermometer: 74 C (165 F) means the chicken is safe to eat.
