Mamma mia, what a sauce! This is my keto take on the creamy tomato chicken that Indian home kitchens and restaurants have made famous, usually served with rice or naan. Here the chicken stays juicy, the sauce turns silky with cream and tomato, and there is no sugar, no flour and no rice to add carbs.

An original keto adaptation: the yogurt marinade and the cream-and-tomato finish follow the classic technique, while the amounts and the method are my own home-kitchen version, not a traditional recipe.

About this keto recipe

Method

  1. Marinate the chicken

In a bowl, whisk the 50 g yogurt with 1 tsp grated ginger, 1 tsp ground coriander, 1/2 tsp ground turmeric, 1/2 tsp chili powder, 1 tsp sweet paprika and 1/2 tsp salt. Add the 360 g chicken cubes, toss well, cover and chill for at least 30 minutes, or up to overnight.

  2. Sear the chicken

Melt 1 tbsp butter in a 26 cm stainless steel skillet over medium-high heat. Lift the chicken out of the marinade, let the excess drip off, and sear for 3 to 4 minutes, turning, until golden on the outside. Cook until the centre reaches 74 °C (165 °F) with no pink left. Move the chicken to a plate and keep the pan juices in the skillet.

  3. Soften the onion

Add the remaining 1 tbsp butter and the 40 g finely chopped onion to the skillet. Cook over medium heat for about 4 minutes, stirring, until soft and lightly golden at the edges.

  4. Build the base

Add the 2 cloves of crushed garlic and the 1 tsp tomato paste. Stir for about 1 minute until the paste darkens to a brick-red colour, then stir in the 1/2 tsp ground black pepper.

  5. Simmer in the cream sauce

Pour in the 80 g crushed tomatoes and the 80 ml whipping cream, scraping up the pan. Bring to a gentle simmer and cook for 5 minutes until slightly thickened. Return the chicken and its juices, and simmer for 5 to 6 minutes more, until the sauce coats the back of a spoon and the chicken is cooked through at 74 °C (165 °F).

  6. Rest and serve

Take the skillet off the heat and rest for 2 minutes so the sauce thickens a little more. Serve hot in a bowl.

Good to know

  • Let excess marinade drip off the chicken before searing, so the pieces brown instead of steaming. A hot pan and a single layer make the difference.
  • Simmer gently once the cream is in. A lively boil can split the sauce, so keep it at a slow bubble and stir now and then.
  • Cook the tomato paste until it darkens to brick red. This removes its raw, tinny taste and gives the sauce its depth.
