Crisp salmon skin deserves a little applause, not a blanket of sauce. This original keto adaptation takes its cue from contemporary Australian seafood cooking, with golden zucchini and bright lemon butter rather than a starchy side. It is a home-kitchen creation, not a traditional named dish—simple ingredients, a satisfying plate, and a very happy frying pan.

About this keto recipe

Method

  1. Prepare and dry

Halve the zucchini lengthways and slice into 7 mm half-moons. Pat the salmon thoroughly dry, especially the skin, and keep it separate from the vegetables. Wash hands and clean any utensils or surfaces that touched raw fish. Set out a large non-stick frying pan, about 30 cm across for two servings, a fish slice and clean plates.

  2. Brown the zucchini

Heat half the olive oil in the pan over medium-high heat. Add the zucchini in a loose layer and cook for 8–10 minutes, turning occasionally, until golden on the flat faces and tender but not collapsing. Season with half the salt and half the pepper near the end. Transfer all the zucchini to a clean plate. For larger quantities, work in batches or use a second pan; allow additional cooking time.

  3. Crisp the salmon

Add the remaining olive oil to the pan over medium-high heat. Season the salmon with the remaining salt and pepper immediately before cooking. Lay it skin-side down, away from you, and press gently with a fish slice for 15–20 seconds to keep the skin flat. Reduce to medium and cook for about 6–8 minutes without moving it, until the skin is crisp. Turn and cook flesh-side down for 2–4 minutes, adjusting for thickness, until the thickest centre reaches 63°C. Turn skin-side up; the flesh should look opaque and flake easily. Use clean utensils for the cooked fish.

  4. Make lemon butter

Transfer the salmon skin-side up to clean serving plates. Remove the pan from the heat for about a minute so the butter will not scorch. Add the butter, return to low heat and swirl just until melted. Take off the heat and carefully swirl in all the lemon juice; it may briefly sizzle. Keep the sauce fluid rather than boiling it down.

  5. Finish the plate

Return the cooked zucchini to the pan and toss in the lemon butter over low heat for about a minute, just until hot. Divide beside the salmon and spoon any remaining sauce around the fish, keeping the crisp skin uncovered. Serve immediately.

Good to know

  • Dry skin is the secret to a crisp surface. Blot it again just before seasoning, and do not add lemon juice to the fish before frying.
  • Give zucchini room to brown. If the pan is crowded or filling with liquid, cook smaller batches rather than stirring constantly.
  • Keep the fish skin-side down for most of its cooking time. Lower the heat if the skin darkens before the sides begin to turn opaque.
  • Let the pan cool briefly before adding butter, and add the lemon juice off the heat. This prevents scorched butter and excessive spitting.
