Keto Croatian-Inspired Cod with Garlicky Swiss Chard
A potato-free, Croatian-inspired main dish of golden cod loins with garlicky Swiss chard, olive oil and lemon. Adapted rather than traditional blitva.
Golden cod and glossy greens bring a little Adriatic sunshine to the table, no elaborate shopping list required. Inspired by coastal Croatia's pairing of fish with blitva, this home-kitchen adaptation leaves out the traditional potatoes and uses readily available cod. The garlic does the talking; the lemon supplies the final wink.

Method
Prepare the greens and fish
Wash the chard thoroughly. Separate the stems, slice them about 5 mm thick and cut the leaves into roughly 3 cm strips; leave the leaves slightly damp after washing. Slice the garlic. Check the cod for pin bones and pat it thoroughly dry with kitchen paper. Keep raw fish and its utensils separate from the vegetables, and wash your hands after handling it.
Wilt the garlicky chard
For two servings, use a deep 28 cm black non-stick frying pan with a lid. Heat half the olive oil over medium heat. Add the chard stems and cook for 3 minutes, stirring. Add all the garlic and stir for 30 seconds, just until fragrant. Add the damp leaves in handfuls with half the salt, letting each handful collapse before adding the next. Cover for 2 minutes, then uncover and toss for 3–4 minutes, until the stems are tender and the leaves are wilted but green. Let excess liquid evaporate; the greens should be glossy rather than swimming in liquid.

Transfer the chard to a clean bowl and cover to keep warm. Wipe the pan with kitchen paper held in tongs, then add the remaining olive oil and heat over medium-high until shimmering, not smoking. Season the cod with the remaining salt and half the pepper. Lay it in the pan with space between the pieces and cook undisturbed for 4–5 minutes until golden underneath. Turn gently with a fish spatula, reduce the heat to medium and cook for 3–5 minutes more. Check the thickest part with a food thermometer: it must reach 63°C (145°F), with opaque flesh that separates into flakes. Thicker pieces may need longer. For three or four servings, use two pans or cook in batches, allowing about 10 extra minutes if batching.

Move the cooked cod to clean plates, turning the golden side upwards. Take the pan off the heat and stir half the lemon juice into its warm oil, then spoon this over the fish. Toss the remaining lemon juice and pepper through the warm chard. Divide the greens beside the cod, with one fish loin per portion, and serve immediately.
Good to know
- Dry the cod until the surface feels almost tacky. A wet surface steams before it browns and makes the fish more likely to break when turned.
- Give the sliced stems their head start before adding the leaves. If the garlic begins to colour, add the damp leaves promptly and reduce the heat.
- Leave space between the cod pieces and turn them only once, supporting each whole loin with a wide fish spatula. If a piece resists lifting, give it another short moment to release.
