Keto Portuguese-Inspired Piri-Piri Chicken with Cabbage
Smoky, garlicky piri-piri chicken thighs with charred cabbage and sweet red pepper, all cooked in one skillet.
Mamma mia, a fiery chicken dish with no bread, no rice and no potatoes in sight! Piri-piri is the chilli, garlic and lemon marinade loved in Portuguese grill houses. This keto adaptation cooks boneless chicken thighs in one skillet with cabbage and sweet red pepper instead of fries, so it is my own home-kitchen version rather than a traditional recipe. Buon appetito!

Method
Mix the marinade
In a bowl, crush 4 garlic cloves to a paste with the side of a knife and 1/2 tsp salt. Stir in 1 tsp sweet smoked paprika, 1/2 tsp crushed dried chilli flakes, 1/2 tsp dried oregano, 2 tbsp lemon juice and 2 tbsp olive oil.
Marinate the chicken
Cut 360 g boneless skinless chicken thighs into 4 cm chunks and pat them dry. Toss the chicken in the marinade, cover and chill for at least 30 minutes, up to 4 hours.
Prepare the vegetables
Cut 200 g green cabbage into 2 cm wedges, leaving a little core in each so they hold together. Slice 120 g red bell pepper into 1 cm strips.
Rest and serve
Take the pan off the heat and let everything rest for 3 minutes. Serve the chicken with the vegetables and pan juices spooned over.
Good to know
- Pat the chicken dry before it goes in the pan, so the pieces brown rather than steam.
- Leave the chicken undisturbed on the first side for 4 to 5 minutes; it releases easily from the pan once it has browned.
- The vegetables cook in the chicken fat left in the pan, so they pick up flavour without extra oil.
- Cook until the thickest piece reaches 74 °C (165 °F); the chicken must be cooked through before serving.
