Chicken Strogonoff with White Rice
Chicken strogonoff with breast strips, mushrooms and a creamy tomato and mustard sauce, served with white rice.
What a dinner! Chicken strogonoff is an everyday classic of Brazilian home cooking: a creamy sauce of Russian origin that Brazil made its own with tomato paste, mustard and cream. Cooked in a single pan, it asks for fluffy white rice and suits a family or friends dinner, ready in about 50 minutes.

Method
Cook the rice
In a pot with a lid, bring the water for the rice to a rolling boil over high heat. Add the rice, cover, lower the heat to the minimum and cook for 15 minutes. Turn off the heat and let it rest, covered, for 5 minutes.
Prepare the ingredients
Cut the chicken into thin strips about 1 cm thick and season with half the salt and half the black pepper. Dice the onion small, slice the garlic thinly, cut the mushrooms into rounds and chop the parsley.
Sauté onion and garlic
In the same pan, over medium heat, add the remaining oil and cook the onion for 3 minutes, until translucent. Add the garlic and stir for 30 seconds.
Make the sauce
Add the tomato paste and the mustard and stir for 1 minute. Add the water for the sauce and the reserved chicken and cook for 3 minutes over medium-low heat.
Serve
Serve the strogonoff with the white rice on the side and sprinkle the chopped parsley on top.
Good to know
- Brown the chicken in a single layer over medium-high heat: in a crowded pan it cooks in its own juices and loses its colour.
- Once the cream goes in, keep the heat low and do not let it boil, so the sauce does not split.
- If the sauce gets too thick, stir in a little hot water gradually before serving.
