Lebanese-Inspired Mujadara with Caramelized Onions
Brown lentils and long-grain white rice cooked together with a long-caramelized onion topping, seasoned with ground coriander and cinnamon. Steps quote amounts for 2 servings. An adapted, not strictly traditional, version.
This dish is vegan: brown lentils and rice, cooked together and crowned with deeply caramelized onions, with no animal products at all. Mujadara is a humble staple of Levantine home kitchens, the kind of pot that feeds a table on a cool evening without fuss. My version uses coriander and cinnamon in place of the cumin of the classic, so treat it as an adapted take. Mamma mia, the onions are the real star, so be patient with them. Buon appetito!

Method
Rinse the grains and lentils
Rinse the rice under cold water, changing the water until it runs almost clear. Pick over the lentils for small stones and rinse them. Set both aside.
Slice the onions
Halve the 300 g yellow onions and slice them thinly into half-moons.
Cook the lentils
In a separate saucepan, add the lentils and 380 ml water. Bring to a boil, lower the heat and simmer for 18 to 20 minutes until almost tender but not mushy. Drain well.
Toast the spices with the rice
Tip about half of the caramelized onions into a small bowl and set aside for the topping. Stir 1 tsp ground coriander, 1/2 tsp ground cinnamon and 1/2 tsp black pepper into the onions left in the pot. Add the rinsed rice and stir for one minute.
Rest and fluff
Turn off the heat, keep the lid on and rest for 10 minutes. Fluff gently with a fork.
Serve
Spoon into bowls and top with the reserved caramelized onions.
Good to know
- Caramelize the onions over medium-low heat and stir often; they need about 30 to 35 minutes to turn deep golden-brown. If they start to stick, add a splash of water and scrape the bottom of the pot.
- Drain the lentils well after simmering; water left clinging to them makes the rice soggy.
- Rinse the rice until the water runs almost clear so the grains stay separate and fluffy.
- Keep the lid on and the heat at its lowest setting, then rest the pot off the heat for 10 minutes so the bottom does not scorch.
