Spanish-Inspired Saffron Rice with Mushrooms and Artichokes: A Golden Evening Dinner
An original home-kitchen adaptation inspired by Paella Barcelona Cooking School's mushroom vegetable paella and the vegetable-rice methods of Basco and Despaña. A complete vegetable-led dinner with saffron, artichokes and lemon; not traditional Valencian paella.
Golden rice, browned mushrooms and tender artichokes bring a little occasion to an ordinary evening, without requiring a restaurant kitchen. Inspired by Spanish vegetable paella, this home adaptation uses onion and jarred artichokes; it is not presented as traditional Valencian paella. Put the pan on the table and let dinner be the centrepiece.

Method
Prepare the vegetables
Slice the mushrooms thickly, cut the pepper into thin strips, finely chop the onion and garlic, and quarter the drained artichokes. Grate and measure the tomato. Chop the parsley and cut the lemon into wedges. Allow about 20 minutes for preparation.
Warm the saffron stock
Heat the vegetable stock in a saucepan until steaming. Crumble in the saffron and keep the stock hot over very low heat while cooking the vegetables. Heat the reserved water separately when needed.
Brown the mushrooms
Choose a wide, shallow, heavy pan: approximately 22 cm for one serving, 28–30 cm for two, 34 cm for three or 38–40 cm for four. Heat half the oil over medium-high heat. Add the mushrooms in a loose layer and cook for about 6 minutes, turning occasionally, until browned and their released liquid has evaporated. Transfer to a plate.
Build the tomato base
Reduce the heat to medium. Add the remaining oil, onion and pepper; cook for 5 minutes. Add the garlic for 30 seconds. Stir in the tomato and cook for about 5 minutes, until thick rather than watery. Add the paprika and rice and stir for 30 seconds, coating the grains without scorching the paprika.
Start the rice
Pour in the hot saffron stock. Taste the liquid carefully and add the measured salt only if needed. Return the mushrooms and distribute the artichokes across the pan. Level the rice with one gentle stir, then leave it undisturbed. Bring to a lively simmer and cook uncovered for 8 minutes; rotate the pan carefully if the burner heats unevenly.
Finish gently
Lower the heat to a gentle simmer for another 12–15 minutes. Scatter the frozen peas over the surface for the final 7 minutes. Do not stir. Taste a grain near the end: it should be tender with a little firmness, never a hard, chalky centre. If the pan becomes dry before the rice is ready, add some of the reserved hot water around the edges in small splashes and continue gently. Stop when the rice is cooked and free liquid has disappeared; a crust is optional, not worth burning dinner for.
Rest and serve
Take the pan off the heat, cover loosely with foil and leave for 5 minutes. Scatter with parsley and serve with the lemon wedges. The total estimate includes this resting time; rice brands and burners can shift the finish by a few minutes.
Good to know
- This is an adaptation, not a claim of Valencian authenticity. Paella Barcelona omits onion; Despaña includes it. This version follows the latter approach and uses accessible jarred artichokes.
- A thin rice layer matters more than a special pan. For four servings on an ordinary stove, two 28–30 cm skillets on separate burners are easier than a large pan on a small burner; divide every ingredient equally.
- Liquid needs vary with pan width, heat and rice brand. The measured reserve is an adjustment allowance, not an instruction to pour it all in. If substituting another short-grain rice, follow its absorption guidance and expect a different texture.
- For a budget adaptation, replace saffron with 0.25 g ground turmeric per serving: use 0.25 g, 0.5 g, 0.75 g or 1 g for 1, 2, 3 or 4 servings respectively. This changes the flavour and is not a traditional equivalent.
