30-Minute Finnish-Inspired Spinach Pancakes with Cottage Cheese
Small Finnish-inspired spinach pancakes served with plain cottage cheese for an easy, economical vegetarian lunch. Fresh spinach and canola oil make this an adaptation, not an exact traditional formula.
Finland's spinach pancakes turn a handful of everyday ingredients into a cheerful savory lunch. This home-kitchen adaptation uses finely chopped fresh spinach and a simple cottage cheese accompaniment rather than a sweet topping. Golden edges, tender middles, and no elaborate shopping list: that is a very good midday bargain.

Method
Warm the pan
Let the batter stand for 3 minutes while warming a 28 cm nonstick frying pan over medium heat. Brush a little of the measured oil across the base; reserve the rest for later batches.
Set the first side
Stir the batter, then use about 50 to 60 ml per pancake to make four separate rounds about 10 cm wide, spreading gently if needed. Cook for about 2 minutes, until the edges look set and the undersides are golden. Aim for about four pancakes per person.
Flip and brown
Flip carefully and cook for another 1 to 2 minutes, until both sides have golden patches and the centers are fully set with no wet batter. Transfer to a plate and repeat with the remaining batter, stirring before each batch and brushing with the remaining measured oil as needed. Four servings take about four batches; use two pans if your pan cannot comfortably hold four pancakes.

Divide the pancakes between plates and add the cottage cheese alongside. Serve immediately while the edges are still lightly crisp.
Good to know
- Dry the spinach well before chopping; clinging water can make the batter too loose and the pancakes fragile.
- Chop the leaves into tiny pieces and stir before every batch so each pancake gets an even share of spinach.
- Keep the heat at medium. If the surface browns before the center sets, lower the heat rather than flipping repeatedly.
