Homestyle Baião de Dois with Bacon and Queijo Coalho
Homestyle baião de dois with rice, cowpeas, bacon, calabresa sausage and queijo coalho, for 2 people, ready in about 45 minutes.
Baião de dois is the Northeastern Brazilian way of saying that rice and beans decided to share the same pot, and they were right. This homestyle version swaps the traditional carne de sol or dried beef for bacon and calabresa sausage, uses cowpeas that are already cooked, and is ready in about 45 minutes. It is an adapted version, not the traditional one, but it has the feel of a family dinner. Enjoy!

Method
Prepare the ingredients
Cut the bacon, calabresa and queijo coalho into small cubes of about 1 cm. Chop the onion and garlic, slice the spring onion, chop the coriander and drain the cooked cowpeas well. Keep everything separate in small bowls.
Sauté the onion and garlic
Add 2 tbsp of clarified butter and the onion, and sauté for 3 minutes until translucent. Add the garlic and stir for 1 minute without letting it burn.
Cook the rice
Pour in 400 ml of hot water, add 1/2 tsp of salt and 1/2 tsp of ground black pepper, and bring to the boil. Lower the heat, cover and cook for 15 minutes without lifting the lid, until the water is absorbed.
Finish with cheese and herbs
Scatter the queijo coalho over the top, sprinkle the spring onion and coriander, cover for 2 minutes so the cheese softens, and serve straight away.
Good to know
- Fry the bacon and sausage over medium heat, without rushing: the fat must render so the meat turns crisp outside without burning.
- Toast the rice in the fat before adding the water; the grains stay looser and less sticky.
- Drain the cowpeas well, because excess water makes the rice soggy. Without queijo coalho, use firm mozzarella cut into larger cubes, as it melts less.
