30-Minute Polish-Inspired Potatoes with Creamy Radish and Chive Cheese: A Budget Lunch
A quick vegetarian lunch of hot skin-on potato chunks and a cool radish-and-chive cottage-cheese topping, adapted from the potato-and-cheese tradition of Greater Poland.
Hot potatoes and cool, creamy cheese make a wonderfully unfussy lunch, with crunchy radish doing the lively work. Inspired by the potato-and-cheese dishes of Greater Poland, this everyday adaptation uses small-curd cottage cheese instead of traditional farmer's cheese and cuts the potatoes into chunks to speed up cooking. A short ingredient list, a single saucepan, and no grand kitchen production required.

Method
Prepare the vegetables
Start heating the measured water in a kettle or a covered saucepan while you scrub the potatoes and cut them into even 2 cm chunks. Wash and dry the radishes and chives, then dice the radishes finely and chop the chives. Use a snug saucepan that will let the measured water cover the potato chunks.
Simmer the potatoes
Carefully put the potato chunks in the saucepan with the hot measured water and about half the salt. Bring back to the boil, then reduce to a steady gentle simmer with the lid ajar. Cook for 12–15 minutes, until a knife slides easily through the thickest chunk without resistance. Prepare the topping during this simmering time.
Mix the creamy topping
In a mixing bowl, lightly mash the cottage cheese with a fork, then stir in the sour cream. Fold in all the diced radishes, chopped chives, black pepper and remaining salt. The mixture should be thick and spoonable, with small cheese curds and the vegetables evenly distributed. Keep it off the heat.

Drain the tender potatoes thoroughly into a colander, discarding the cooking water. Return them to the warm saucepan off the heat and leave uncovered for 1 minute, until the cut surfaces look slightly floury and no water remains in the bottom.

Divide the hot potatoes between plates and spoon the cool radish-and-chive cheese mixture over them. Serve immediately, keeping the potato chunks intact rather than stirring everything into a mash.
Good to know
- Keep the potato chunks close to 2 cm across. Uneven pieces leave you choosing between firm centres and crumbling edges.
- Simmer rather than boil fiercely once the potatoes are in the pan; a rolling boil can break the chunks before their centres soften.
- Drain loose liquid from the cottage cheese before measuring, and dry the washed radishes well. Both steps help the topping stay creamy rather than watery.
- Mash only some of the cottage-cheese curds with the fork, then fold in the vegetables. This gives a cohesive topping without losing all its texture.
